Frying Pan Meals

Apple Sauce Pancakes

5 cups flour
2 Tbsp. baking powder
1 tsp. cinnamon
1 qt. (3 oz. can) applesauce (unsweetened)
6 Tbsp. syrup or sugar
1/4 cup melted shortening
2 eggs

1. Mix the flour with baking powder and cinnamon.

Add applesauce, made rather thick, and stir to a batter.

Bake on griddle or skillet.

Serve as usual with butter and syrup.

For a more elaborate version, the cakes may be made small and thin, rolled after baking, dusted with powdered sugar, each garnished with a small fried apple ball, and thus dressed up enough to appear at a company breakfast.
